Turn an iPod Touch into an iPhone
Lifehacker features SIP for the iPod Touch. Now, granted this only works if you're within range of a wifi hotspot (actually, can the ipod touch do Internet-over-Bluetooth?), but it is the first step to getting Apple and AT&T to behave.
